My grapes are harvested at a low temperature and kept in cold maceration for a few days. After squeezing, when they are still must, ferment at controlled temperatures. I refine on the lees for a few months and enhance and keep my aromas unaltered. After assembly, I rest in the steel tanks before reaching the bottle.
