The grapes are harvested at different times between September and October to obtain a wide range of aromas and sensations. After fermentation, the Glera and Pinot Noir cuvée is prepared for the second fermentation. The sparkling process is slow and prolonged. This allows me to achieve finesse in the perlage and greater freshness.
