The grapes are harvested at different times between September and October to obtain a wide range of aromas and sensations. The sparkling wine is made using indigenous “Mother” yeasts of the masses ready for consumption. The sparkling process is slow and prolonged. This allows me to achieve finer perlage and greater freshness.
